Artisanal white Caciotta cheese
Spun paste cheese made from unpasteurized cow's milk, with the addition of only rennet and salt.
Aged for about 4-5 days, it is straw-yellow in color with a slightly puff-pastry rind as in artisanal production. The taste is sweet but tasty, given by the uncontaminated pastures of Sicily right at the foot of the Quisquina Hermitage.
