Soil: calcareous, alkaline and rich in calcium soil

Grapes: Nero D’Avola and Sirah (50% - 50%)
Fermentation: in steel at a controlled temperature of about 28 degrees.
Aging: in steel containers for 5 months, then 10 months in used barriques, then 3 months of further aging in the bottle.

Tasting notes: An intriguing wine with authentic and vivid colors in nuances. The Sicilian warmth is noted by the slow fluidity and the strong impact nose. Meticulous and defined in detail, notes of raspberries, wild strawberries and currants, integrated and alternated with those spicy sweet and peppery at the same time, they close the scent. The wine enters the mouth in a decisive, dry and warm, large enveloping but tinged with a significant freshness and fine tannins, which leave cleanliness and goodness to the taste.
Serving suggestions: pecorino cheese from Monti Sikani, roast lamb with potatoes, grilled meat and sausage, pasta alla Norma with fried aubergines.
