Sheep's milk cheese, also known as "Second Salt", aged for at least 4 months, produced in the traditional way with the addition of only rennet and salt, with unpasteurized raw milk.
An intense flavor given by sheep's milk and delicate at the same time, characterized by the hill pastures of an uncontaminated area surrounded by greenery, about 400 m above sea level.
Excellent both for table and grating, for those who do not like cheeses that are too spicy or seasoned, it goes well with everything, in first courses or in combination with preserves in oil and salami.
