Hard, raw cheese made exclusively from whole sheep's milk, fresh and coagulated with lamb rennet in paste. Seasoned for at least 6 months.

This cheese is produced exclusively in Santo Stefano Quisquina with milk of the same origin, with subsequent maturation at the Azienda "Giovanni Cacciatore"
