Red wine made from grapes harvested by hand in a vineyard located on a sunny hill and caressed by the wind in an area rich in limestone.
The must is left to macerate on the skins for 8 days. After fermentation the wine rests and refines for about six months at a controlled temperature in steel containers and for a year in oak barrels.
Red wine from two varieties now home in Sicily: Cabernet and Merlot.
Production area: Chinesi district, Alessandria della Rocca AG
Altitude: 400 mt
Soil: calcareous, alkaline and rich in calcium soil
Harvest: Merlot, first week of September; Cabernet Sauvignon, second week of September.
Grapes: Merlot and Cabernet Sauvignon (50% - 50%)
Fermentation: in steel at a controlled temperature of about 28 degrees.
Aging: in steel containers for 6 months, then for 12 months in oak barrels.
Degrees: 14.5%
Serving temperature: 18 degrees
Tasting notes: Purple red wine with violet reflections with an intense and complex bouquet, in the mouth clear notes of plum and ripe cherry, the tannins present give the wine a great softness.
Food pairing: pecorino cheese from Monti Sikani, roast lamb with potatoes, grilled meat and sausage, pasta alla Norma with fried aubergines.
