Sicilian Pecorino DOP
Raw, hard cheese produced exclusively with whole sheep's milk, fresh and coagulated with lamb rennet in paste. Salting is carried out dry, produced in the period between October and June; aged for at least 4 months.
Crust white-yellowish, bearing the signs of the basket in which it was formed (canestrata), capped with oil or oil sludge, compact paste, white or straw-colored, with limited holes, characteristic spicy flavor.
An intense flavor given by sheep's milk and delicate at the same time, characterized by the hill pastures of an uncontaminated area surrounded by greenery, about 400 m above sea level.
It is used both as a table cheese, for cooking and as to grater.
