Sheep's milk cheese from own farms, with raw processing and matured for at least 6 months
An intense taste given by sheep's milk, excellent both for table and grating, with notes of high spiciness given by the aging that recalls the most classic traditional Sicilian pecorino.
Produced in the upper part of the territory of Santo Stefano Quisquina, it contains in the taste the scents of mountain pastures, at the foot of a wooded area that goes from 900 to 1000 meters above sea level.
It is used both as a table, cooking and grating cheese.
