An intense taste given by sheep's milk and delicate at the same time, excellent both for the table and for grating, with notes of spiciness given by the seasoning that recalls the most classic Sicilian pecorino cheeses.
Produced in the upper part of the territory of Santo Stefano Quisquina, it contains in the taste the scents of a mountain pasture, at the foot of a wooded area that goes from 900 to 1000 meters above sea level.
It goes well with everything, as an appetizer, in the first or after dinner accompanied by a red wine
