Red wine made from grapes harvested by hand in a vineyard located on a sunny hill and caressed by the wind in an area rich in limestone.
The must is left to macerate on the skins for 8 days. After fermentation the wine rests and refines for about a year at a controlled temperature in steel containers and for six months in oak barrels.
Red wine from two varieties now home in Sicily: Cabernet and Merlot.

Altitude: 400 mt
Soil: calcareous, alkaline and rich in calcium soil
Harvest: Merlot, first week of September; Cabernet Sauvignon, second week of September.
Grapes: Merlot and Cabernet Sauvignon (50% - 50%)
Fermentation: in steel at a controlled temperature of about 26 degrees.
Aging: in steel containers for 1 year, 6 months in reconditioned barriques, then 3 months of further refinement in the bottle.
Degrees: 13.5%
Serving temperature: 18 degrees
Tasting notes: An intriguing wine with authentic and lively colors in the nuances. The Sicilian warmth can be seen from the slow fluidity and from the nose with a strong impact. Meticulous and defined in the smallest details, notes of raspberries, wild strawberries and currants, integrated and alternated with spicy sweet and peppery notes at the same time, which close the perfume. The wine enters the mouth in a decisive way, dry and warm, great enveloping but pricked by a significant freshness and strong tannins, which leave the taste clean and good.
Food pairing: Pecorino cheese from Monti Sikani, roast lamb with potatoes, grilled meat and sausage, pasta alla Norma with fried aubergines.
